Abstract
:
In this research study the characteristics and standards of quality and microbiological safety of the mixtures containing honey, known commercially as honey pastes, available in the market. Was also in this research study the inhibitory effect on microbes and likely underestimated the inhibitory concentrations of honey pastes on four pathogens transmitted by food, namely: E. coli O 157: H7, Salmonella typhimurium, Listeria monocytogenes and coagulase-positive Staphylococcus. Was detected over the presence of pesticide residues and toxins aflatoxin in samples of honey pastes under study, as well as installation Alvezyukimaaúa her relationship with the overall quality of this food product. Concluded that in general the honey pastes with low microbiological quality and unsafe for human consumption. In spite of the non-existence of the risk of life-threatening, but there is still a need to control standards in order to avoid poisoning or diseases transmitted by food as a result. Not detect any residues of pesticides or Aflatoxins in all honey samples tested. However, these themes are still important research to achieve the safe consumption of honey pastes in all respects. This report contains the first review of previous research in the topics under study, and another part of the research methods used to study these themes and to achieve the desired objectives. Followed by a presentation of the results obtained with the discussion, and finally put the recommendations and conclusions drawn from this research.
